The Laiterie Charlevoix Cheese Making Economuseum was founded in 1948 by the present manager’s grandparents. It is one of the rare Quebec dairy enterprises that has chosen to preserve the artisanal aspect of processing cheddar cheese, always, of course, in strict compliance with current processing standards. The dairy provides a unique opportunity, every day before 11:00 a.m., to watch a demonstration of the rudiments of cheese processing and aging. Stop by the sales counter where you can not only admire old pieces of dairy equipment, but also sample the Economuseum’s delectable products such as cheddar cheese curd, block cheese, raw milk cheese, cheese aged to perfection, habitant cream, etc.
