The cheese maker Fritz Kaiser, originally from Switzerland, is established in the Richelieu valley where he has been pursuing his art for 20 years. It was the first raclette maker in Canada. It now produces washed rinds to firm and semi-firm pasta with milk primarily sourced from the Kaiser family's dairy production.
